We remove the eyes from small calamari and fry them on olive oil. We add garlic, parsley, salt and pepper, and after a few minutes we pour white wine on them. We let the wine boil slowly away, and at the end we add sour capers. We cook for 2-3 minutes and serve.
The dish has a bitter-sweet taste and is a typical fishermen’s meal.
