The mollusks are cleaned and boiled in a bit of water. We take out the meat and filtrate the water which will later be used as cornerstone. On olive oil we saute onions and add garlic, parsley, salt and pepper. We mix a bit of concentrate in the cornerstone and add the mollusks. After five minutes we add the rice and keep cooking. At the end we pour in some wine and season the flavor. A typical fishermen’s meal.
